AT around 3 p.m. on a hot and humid Saturday in early July, the polo player Nic Roldan arrived in a borrowed Range Rover at the home of Michael Borrico, a contractor in Water Mill, N.Y. Mr. Roldan had just come from World Pie restaurant nearby, and before that London, where he lives in the summer, to host the annual Charity Polo Classic benefiting Rally for Kids With Cancer. He would be in the Hamptons for less than 48 hours.
